Situated in the heart of Austin, Texas, Franklin Barbecue stands as a legendary beacon for barbecue lovers seeking an authentic taste of Central Texas’s finest smoked meats. Specializing in traditional barbecue cuisine, Franklin Barbecue is renowned for its impeccably smoked brisket, sausage links, turkey breast, and pork ribs, elevating these classics to an art form that both Texas locals and travelers rave about.
From the moment you step up to the counter at 900 E 11th St, you know you’re in for an experience worth the wait. The unmistakable aroma of slow-cooked meats mingling with the subtle smoky char of their signature bark instantly whets the appetite. The brisket, often hailed as the star of the show, is tender and moist, bursting with a depth of smoky flavor and the perfect caramelized crust that Aaron Franklin’s meticulous technique brings to life. It’s no surprise that diners like Luke Faddis proclaim it the #1 BBQ brisket they’ve ever tasted, describing it as juicy and beyond flavorful.
Franklin Barbecue offers a curated menu that reflects its mastery over traditional barbecue staples. Must-tries include their brisket sandwiches, priced at $17, which ooze juicy richness in every bite, or the pulled pork and turkey sandwiches at $14, each carrying a robust smokiness that’s balanced beautifully by the tender texture. For those with a heartier appetite, the Tipsy Texan sandwich at $13 delivers a smoky medley of brisket and sausage, packing bold flavors and a satisfying bite.
The side dishes at Franklin are thoughtfully crafted to complement their meats without overshadowing them. The creamy potato salad ($4 for single) offers a velvety counterpoint to the smoky proteins, while the pinto beans ($11 per quart) and fresh slaw ($6 pint) bring a refreshing balance and wholesome depth to the plate.
No meal here is complete without sampling one of their decadent pies. The bourbon banana and pecan pies—both $8—deliver a sweet, rich finale with just the right touch of Southern comfort and homemade charm.
Dining at Franklin Barbecue is as much about community and anticipation as it is about the food itself. Customers consistently note the quintessential Austin experience of waiting in line, often for over an hour, yet the camaraderie among BBQ enthusiasts and the thoughtful provision of camping chairs make the wait not just bearable but part of the fun. Juli O appreciates this hospitality, highlighting how Franklin makes the experience welcoming, even during the busiest periods.
Timing your visit wisely can enhance your experience. As Dimitri Souffan mentions, arriving slightly after 1:30 pm can significantly reduce wait times without compromising the quality or selection of food. Still, the demand is so high that popular items like the Dino ribs may sell out quickly, as noted by Juli O, so early arrival, as recommended by Lenney Moore who got in line at 8am, is the best bet for sampling a wide array of offerings.
Whether you are a barbecue aficionado or a first-time visitor eager to understand what makes Texas BBQ an iconic culinary treasure, Franklin Barbecue delivers. Its perfected brisket, savory sausages—including jalapeño varieties—and flawlessly smoked turkey and ribs make it a pilgrimage destination for anyone serious about authentic barbecue. Beyond the plates, it’s the dedication, atmosphere, and rich flavors that leave a lasting impression, turning casual diners into devoted fans who return time and again.
Franklin Barbecue isn’t just another restaurant—it’s a celebration of tradition, craft, and community served up one perfectly smoked bite at a time.
Finally had Franklin Barbecue, and it’s officially taken the #1 spot in my BBQ rankings! After years of reading about and watching Aaron Franklin’s techniques, I made it a priority to stop by during a Texas trip, and it did NOT disappoint. The brisket is the star of the show—tender, juicy, and bursting with flavor. The bark was absolutely perfect, delivering that smoky, caramelized crust I’d dreamed about. It’s everything you’d expect from Franklin’s mastery and more. The surprise standout was the jalapeño cheddar sausage, which took second place among the meats. I’m not even a huge sausage fan, but the gooey, cheesy goodness that oozed out with every slice was unreal—pure deliciousness! The turkey, pulled pork, and pork ribs were all fantastic, tying for third. Each one is absolutely worth ordering, showcasing the incredible range of Franklin’s craft. I only tried the potato salad as a side, which was solid but not the best I’ve ever had—still a great complement to the meats. I grabbed two pies to go, and I’ll update this review once I dig into those. For now, Franklin Barbecue is a must-visit for any BBQ lover. The hype is real, and it’s worth the wait!
Franklin Barbecue truly lives up to the hype. The brisket is hands down the best I’ve ever had—tender, flavorful, and absolutely worth trying at least once. They even provide camping chairs for guests waiting in line, which is a nice touch since we waited about an hour and a half. They had already run out of the Dino ribs by the time we ordered, which was a bit disappointing, and the selection of sides is limited. That said, the quality of the meats more than makes up for it. For me, this feels like more of an “experience” visit—something to do once for the tradition and the story. With so many fantastic BBQ spots in Austin, the long wait may not be worth repeating, but Franklin’s is still a 5-star establishment in its own right.
Was in Austin for work and got a chance to try Franklin. Really wanted to see if it was worth the hype. I arrived around noon on a Thursday and it took 1h10 to get my food. Be prepared to wait. Seems like if you arrive after 1:30, wait is shorter. The brisket was amazing, very tender, not dry. Sausage was great, a lot of flavors. Bbq sauce were great as well. The spicy one was my favorite, just the right amount of spice (not too spicy). Sides were good/ok. Nothing special. Special mention to the key lime pie. Yummy! Worth trying at least once imho!
Finally got to check out Franklin BBQ after passing by so many times and always seeing those long lines out front. I’d been curious for a while and wanted to see if it was really worth the hype—and honestly, it is. A few friends and I went on a weekday, got there about 30 minutes before they opened, and there was already a small crowd waiting with foldable chairs, chatting and hanging out. The wait wasn’t bad at all. The brisket was ridiculously tender and flavorful, the ribs had that perfect smoky bite, and the sausage was juicy with just the right kick. Everything we tried was legit. Pro tip: if you're going with a group, definitely get a quarter or half pound of each meat instead of a full pound of anything. The portions are bigger than you'd think, and it’s easy to overorder. This way, you get to try a bit of everything without wasting food—or feeling like you need a nap afterward. All in all, it was a great experience. The food lived up to the reputation, the vibe was chill, and I’d totally go back again. If you’re in Austin and haven’t been yet, Franklin BBQ is one of those places you should try at least once.
On my bucket list as the most famous BBQ restaurant in the world! Got there at 8am on a Sunday and was 14th in line. The Line gradually grew very long and they do run out of food so I highly recommend getting there early! I tried several meats including brisket, beef rib, pork ribs, regular and jalapeño sausage and turkey with beans and slaw! The brisket is as good as advertised and a must try, and the other items were delicious as well. I had leftovers that blew my socks off it was so good! Definitely worth a visit, glad I got it knocked off my bucket list. Austin was great! Wonderful time spent enjoying the city!
I lived in Kansas City for 10 years so I’ve had a lot of good barbecue, but I had to go to Austin for a business trip. I landed at 9:45 AM and had the morning off, so I decided to venture into the Franklin Bbq line. I arrived in line at 10:15 on a Thursday and it was still pretty deep. They open at 11 AM and I actually didn’t get my food until 1145. Totally worth it though. Time went by pretty quickly. Brisket is like nothing I’ve ever had before. Pulled pork was great too. Highly recommended.
I flew in from NorCal just try this place out. I got there at 0700 on a Saturday morning, and there was already 10-15 people in line. When they finally opened at 11, there was easily 150 people waiting. The food is 100% worth the wait, and 100% worth the trip. The brisket, turkey, and ribs were truly the best I’ve ever had. It was SO GOOD!
What can you say, best brisket in Texas! I’ve been here 2 times, yes you have to wait inline but it’s part of the experience! The cost is higher, but the quality will not disappoint! The brisket is the show stealer, juicy, great flavor and wonderful! It’s best to get here early find parking and enjoy the whole experience.
